Iirc on the company's site they say that the nuts are shelled by mechanical means only, so the only downside could be the possible level of aflatoxins.

Aaaargh... I don't know why, but I keep on making mistakes regarding to shelled (assuming it's "in de schil") or unshelled, peeled (gepeld) unpeeled.
UNshelled aren't available at all in the Netherlands, is that right?

But as long as it's Wai proof, I think it's okay to buy shelled ones. Thanks again!

Not that I'm aware of, unfortunately.

I contacted a couple of webshops and these Brazil nuts: http://www.bionoot.nl/rauwe-noten/paranoten should also be 100 % raw, no heating involved during harvest and shelling.
(all the other shops answered there's almost always some heating involved during the process and 'raw' (never) is 100% raw.. )

I did double check Unlimited Health, this was the answer:

“We have a steaming process, to condition raw material previous cracking the shell, there is also a cooling process right after it. We don’t have a way monitor raw material core temperature, what we monitor is chamber temperature, which should be in a rage of 95º to 110 ºC for a period of time of 45 to 75 seconds.”

Not so cool, if you ask me!

The process seems like a modified process of an Autoclave.
I have seen packages of shelled (shells removed) nuts in supermarkets with the label "Steam pasteurized".
They never indicated the temperature or duration, but I guess your little detective work of calling them reveals possible nut food-industry standards of how they process nuts. Thanks MvD!

They also have sent me a flow chart of how they process nuts and 4 pages of information / specifications about their Brazil nuts and all relevant parameters.
