This is a nut milkshake recipe from "Heating without Eating" and is really easy to make.
For the nut milk:
Soak 1 cup of nuts overnight (I chose almonds).
Then in a blender, toss the soaked nuts, 2 cups water. Blend thoroughly. Then put the mixture in a cheese cloth bag and strain. This is superquick, the liquid runs through. You may have to squeeze the bag to get the last bit of liquid out.
Then for the milkshake:
Put into blender:
1.5 cups of nut milk
handful of strawberries
1/2 frozen or fresh banana
A pinch of salt
1 tblespoon honey/sugar or 2-3 pitted dates
1/4 cup ice if not using frozen bananas
Vanilla essence to taste (I use 3 large drops); the book says use vanilla bean
And then it's ready to serve.
If you use dates make sure you blend it for a long time otherwise there will be chunky bits of date at the bottom of the shake. I could taste little chunks of strawberries in mine which was quite nice.
Flavor is really like a milkshake - creamy. I'm not partial to milk so this was a bonus for me - it tasted like a shake without the milky aftertaste.
I would make it again.
Very simple to make once you prepare the nut/seed milk by soaking the nuts/seeds overnight and freeze the fruit.
