From Ani Phyo's website. This is quick to make and quite tasty.
Blend
1 cup of almonds and
1/2 cup of sunflower seeds
1/4 teaspoon salt
1 teaspoon tumeric
1/2 cup water
(I added 1 egg yolk to the blended mixture)
Add:
1/2 cup diced tomato
2 tablespoons chopped scallions (I used some ultra-fine chives with seeds attached)
1/4 teaspoon black pepper
Serve on a bed of spinach leaves. Grind more black pepper on top.
It tastes better if you make the spinach leaf bed extra thick. The fresh crispy taste cuts through the creaminess of the mixture and contrasts it nicely.
It was filling; I loved it and then couldn't eat anymore all of a sudden. Good if you're starving. Super-quick to make. I've made this twice now. Don't make too much as it's very filling. The recipe is for 1 person but could easily satisfy two people.
Because of all the blending and the use of veggies and sunflower seeds probably not a good idea for those with acne-prone skin.
