True.
The same is true for high-temp heating (like in baking bread), which also breaks up large proteins, large sugars, and anti-nutrients, increasing digestibility and 'unlocking nutrients'
Yet, bread does contain gluten.

We show that lactic fermentation of wheat flour, as slurry or as part of sourdough bread, did not decrease the TG2-mediated transamidation, in the presence of a primary amine, to an efficient level (73%-102% of unfermented flour). Nor did the lactic fermentation decrease the available TG2 binding motif QLP in α2-gliadin to a sufficient extent in sourdough bread (73%-122% of unfermented control) to be useful for celiac safe food."

Milk by nature contains many hormones, growth factors etc, meant for the suckling calf. It also contains 4 fold more calcium than human babies need.

Is gluten a proven problem for everyone?

what health issues do "acrylamide and various AGEs/ALEs" cause and do Italians :D have the highest rate of these health issues?

Ill agree that milk is not a very balanced food for humans to depend on solely like a calf but I doubt anyone will be drinking it in that way. Some people only use small quantities of milk/dairy in recipies. Couldn't it be possible to make a more balanced food of any single imbalanced food with other foods?

fish meat has hormones, etc also doesnt it?

There are thousands of different AGEs and ALEs; you cannot label their effects.
Couldn't it be possible to make a more balanced food of any single imbalanced food with other foods?
Sure.
We can make anything edible and 'balanced' (regarding the targeted nutrients).
But we can never make it as good as the food that is meant for us naturally.
There are too many different nutrients, and many still unknown.

Any meat contains hormones.
Any meat is from a once living creature, containing hormones to support life of that creature.
These levels are minute.
Milk contains substantial levels as solely designed to induce growth of the suckling.

Never? I think we will all agree there is no one single perfect food. Otherwise the Wai diet would be a diet on that one perfect food. Wai aims to combine different foods for more balanced nutrition. Which food is meant for us to eat is an opinion. In nature we see animals eating rocks occasionally for things like salt or sulfur. If wai is such a natural diet why does it allow anything that is not a whole food and will allow isolated or consentrated foods/nutrients like salt, sugar, oils, etc... foods in forms one could say we would never "naturally" eat or foods in forms not found naturally. when we isolate these nutrients apart from the too many different nutrients, and still many unknown nutrients it came with :D arent we creating an unnatural food? Maybe naturally means different things to different people I guess.

The Wai diet is not (necessarily) a natural diet. It's an optimized diet based upon a natural diet.

Huh?
I don't understand.
Do you mean creating a new food by combining existing foods (for example egg yolks and oranges)into one?
You might indeed genetically manipulate an orange to also produce cholesterol, B12 and vitamin D, for example.
But what is the purpose of that if you can also simply eat both oranges and egg yolks?
