Are pickles un-wai? And if so, how bad is it?

Pickles are not un-wai when you pickle the vegetables yourself, by using vinegar etc., but commercially produced pickled veggies do not undergo such a timely procedure; 'faster' procedures are applied that include heat.
Commercially produced pickles can cause acne (and contain cancerous N-nitrosamines), but not as readily as cooked meat.

One usually pickles vegetables by cooking them in jars in a mixture of water and vinegar (plus herbs / salt etc.), but 'mild' vegetables like onion, cauliflower, bell peppers, radish and carrots (and cucumber) can also simply be soaked (for days) in such a mix (equal parts water and vinegar, plus some dill, fennel or any other herb).
Must be some recipes out there (on other raw-food sites?). Leave out salt etc, of course; instead you may add sugar.
