I simply started with typing "MaIllard Reaction" in the PubMed search engine.
Then you get about 2800 studies, which means i have to scan the titles for something that directly catches my eye.
I click on it, and start skimming rapidly. When i come across something interesting, i quote it on the webpage.
Go to the next study, and so on.
After a while, having collected dozens of quotes, a pattern will emerge, which makes me search more specifically.
If i get stuck somewhere, i look for studies about that subject that are available for free entirely, and check out the sources it quotes.

So it is a "Spontaneous Reaction" to Search Engines that yields the wiki page.

I have had time (no pending exams and school work) to read Wai Wiki and tinker with it a bit.
Got it charted...(still tinkering). It is easier to see what amino acids + action = product.
