I think it's a vegan lifestyle that is needed during that course.

Food is supplied, and one can't bring their own food, if I'm not mistaken. It's either vegetarian or vegan, yeah.

so now it's nothing wrong to eat 3 big meals per day if my energy storage are empty?
after vipassana courses my daily menu has changed :
8:00 big plate of salads (lettuce, tomato, cucumber, oil, nuts)
.... sipping (500ml) juice till...
13:00 big plate of salads
.... sipping (400ml) juice till...
18:00 big plate of salads
20:00 2 egg yolks

You must take extreme measures to be able to make sure to completely empty your energy stores in between 3 big meals.
In practise, you cannot.
Wai Warrior is extreme, its NOT an optimal diet (regarding digestion, for example)
No energy intake whatsoever all day, followed by intense exercise,
prior to one big meal, followed by some smaller meals. Do you see the difference with eating big meals on a no-fasting diet?

before courses i felt a little obsessed with food "what, when, how much to eat... planning, anxiety, fear and so on.." It was hard to listen to my body signals. It was more psichological issue so I got tired of it.

By that time, I was eating frequently and small meals, but it was too much carbs and too little fats in total.
One day 6-8 egg yolks... next day 100-200g fish.
Carb : fat ratio was wrong and too much protein

During courses there was lots of vegetarian food. We were allowed to eat only 3 times per day. At 6:30 breakfast... 11:00 lunch and at 17:00 evening snack - just one fruit

Thank God there was dried fruits during breakfast and lots of salads with olive oil at lunch, actually I didn't have anything else to eat. So 10 days passed without protein.
Result: I feel calmer inside, much lighter, soft skin and i lost 3,5kg of body weight, it was water i guess.

Now I eat less sugar, more fats, 3 bigger meals during the day, but only salads with lots of oil, not big portions of sugary fruits. The rest of the day (at work) i still drink orange or carrot juice, in evening - 2 egg yolks.

For newcomers on the Wai diet, error #1 is ingesting too little energy.
Thats because its hard to eat big meals and not feel bloated and/or insulin splked.
Consuming very little, very frequently solves that, improving both digestion and energy levels.
As fat does neither bloat you nor trigger insulin, consuming more fat also makes things easier, indeed.

yesterday in the evening I ate 4 white raw button mushrooms with my salads. Later i felt small tummy ache, but i was not paying any attention and after 4 hours i had 3 egg yolks with ornge juice.
Today, I woke up with a huge abdominal pain, headache, loss of appetite, chills, nausea
Thinking about or looking at food makes me feel sick.
could it be symptoms of mushroom poisoning?
I am afraid of salmonella or something like that.

Eating raw mushroomsmay may readily cause abdominal pain and the like.
do you have a fever?
Salmonella is unlikely in your case, as you are already used to eating raw egg yolks,
so that your defense knows how to deal with salmonella.

Today I cooked rainbow trout and hake fish in oven at 50-60 C temperature for 40-50min.
and wooow... the taste was much better than raw farmed salmon.
Is it 100% safe to cook meat/fish at 60C?

Not totally 100%, as some damage will occur anyway, but yes its 99% safe.
