Scromboid is only a problem if the fish is not properly refrigerated. Additionally, scromboid "symptoms generally only last a few hours and are rarely life-threatening." (http://www.healthsystem.virginia.edu/uv ... l/fish.cfm)
Some sepcies of tuna are the only fish exempt from the FDA's freezing requirements because they have a lower incidence of parasite infestation. Did you take a look at the FDA link that RRM found? http://www.13.waisays.com/FDA.htm You can also take a look at the table of fish the FDA considers parasites to be a problem for: http://www.cfsan.fda.gov/~comm/haccp4c1.html. Large tuna are clear.
